Milk Audit Types

Milk audits are not discussed in federal regulations, therefore milk audit requirements are set by each state agency and the types are varied.
A Milk Audit by Day is the most rigorous audit as the dates of milk purchases are taken into consideration. This type of milk audit works like a checkbook register. On a meal-by-meal and day-by-day basis, we compare milk purchases to milk usage and make sure that there is enough milk.
A milk audit by month compares monthly milk purchases to monthly milk usage. This method does not take the dates of milk purchases into consideration.
A substitute milk audit is for individual participants that are marked as drinking a fluid milk substitute. This method compares the amount of substitute milk purchased to the amount of substitute milk used for specific participants.
Note that in order for a Substitute Milk Audit to be correct, a substitute milk must be added to the menu when it is provided by the center. If a substitute milk is not added to the menu, My Food Program assumes that the substitute milk was provided by a parent or adult participant.
